True Cornichons
These are true French cornichons-they have a perfect sourness without being overbearing. Use them for charcuterie boards, pair with raclette, or eat them on their own. The price is worth the higher quality.

Harsh and clunky in flavor complexity
These arrived this morning, and I ate a quarter of the jar--it's not like they're not good. That said, I won't buy them again. They don't have the depth and complexity of cornichon flavor that I expected and would pay to have (and tasted when, decades ago, I was first introduced to these in France). These are priced like that, but they taste like the coarser knock-off version of the real thing. I totally taste and can generally affirm what the other reviewer meant by the "straight vinegar" comment; if you were hoping, like me, that that was a grumpy unfair assessment, friends, I'm sorry to say that that was straight accuracy.I splurged to get these as a special self treat (pregnant here, and I *love* cornichons) rather than buy a store brand, but after eating them, I'll get a store brand and not feel like I'm missing out--comparably, I won't be, and I'll definitely be paying less.

Nothing worse than a limp Cornichon! Only reliable crisp Cornishon on the market!
Leave it to the French to make the best Cornishons! There is truly nothing worse than biting into a limp cornishon, it makes you question the world at large, it creates an instant distrust and ruins the charcuterie. The only people you can trust to get you a crisp cornishon is Maille. Your prosciutto choice can be a huge error, but it wont ruin the plate- (or that packaged salami from Costco that should have been cancelled the moment you picked it up, please dont be lazy with your "saucisson" , but if you get the cheeses and the cornishons, the creamed honey, local jam, and the seeded mustards (Maille is best) then you can get the seal of approval.
